Whatever Goes Wednesday - Banana Bread


Whilst doing some "blog hopping" i came across this neat site! :) Someday crafts

I have found heaps of neat crafting sites lately, and cant wait to get a chance to do some of them! (Yeah right! When will that be????? If the last few days have been anything to measure by, i will NEVER get time to do anything... hehe... lol..... Someday!!! You see, matches me perfectly!

The other day i made the most delicious Banana Bread! It was the first attempt too, and boy it tasted so good! Probably because of the icing i made to go with it. Hehe Brown sugar icing... Mmmmmmmmmmmmmmm!

Banana Bread Recipe

Preparation Time

1 loaf

Ingredients (serves 10

  • Melted dairy spread, to grease
    • 265g (1 3/4 cups) self-raising flour
      • 40g (1/4 cup) plain flour
        • 1 tsp ground cinnamon
          • 140g (2/3 cup, firmly packed) brown sugar
            • 125ml (1/2 cup) skim milk
              • 2 eggs, lightly whisked
                • 50g butter, melted, cooled
                  • 2 overripe medium bananas, mashed

                                      1. 1. Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted dairy spread to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang

Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre. Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surfac

Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.

      • Note: This banana bread will keep in an airtight container out of direct sunlight for up to 3 days. Alternatively, place in an airtight container, then label, date and freeze for up to 1 month. Place in the fridge overnight to thaw.

  • Icing Recipe
  • 1 tbsp. butter
    3/4 c. powdered sugar
    1/4 c. brown sugar
    1/4 c. milk

    Using a small pan, bring the butter, brown sugar and milk to a boil, stirring constantly. Remove from heat. Cool slightly, then add sifted powdered sugar. Beat with a mixer until smooth enough to spread.

Banana bread is a weakness of mine! I like it even better than zuchinni bread. I've never tried icing on it. That could be really dangerously addicting. Cute little baby! Thanks for linking up to Whatever Goes Wednesday. I hope to you back next week!
