Weekend Happenings & Old Posts!

I was so glad to have a fairly relaxing saturday today! It has been the first saturday in a little while that we havent been too busy! How about you? How was your weekend? You'll be pleased to know that i have begun my decluttering journey! Yesterday i spent an hour or so going through my DVD's and CD's, purging them and putting them back in their cases etc! It was such a relief to throw out old broken CD cases, and get rid of old CD's and things! It looks much tidier now too! Which is always a bonus. :) So there you have it...one down, TONNES more to go! haha! :-)

Today i was going through the freezer and was hungry (i have been fairly good the past week i promise!) so i decided to make some pinwheels with puff pastry. They are so yummy! The trouble is once you have one, you cant stop! Haha... not good for the diet i tell you! haha...But the good news is after 1 week of being on my diet, i have lost about 1 kilo. Last week i had lunch at a friends place, so didnt 100% stick to it and still lost weight, so thats always a plus! I have about 11 kilo's to go. So slowly working on that. :)

Back to the pinwheels, all you do is get a sheet of puff pastry and make a little filling for it, of your choice. I used whatever i had lying around (which wasnt much!). I used some tomato paste, some may, some creamed corn, and some salsa. Mixed it altogether, with a few herbs and spices and wala! You then spread some of the mixture over the sheet of pastry (not too thick or it will ooze out everywhere!) and then jelly roll style the sheet of pastry up. Make sure your oven is preheated to around 220c. Cut up the roll of pastry into small slices, say 1.5cms each, and place on a baking tray. Bake them for about 25 mins, or until golden brown. Sometimes, less depending on your oven! 
Enjoy! They taste great by themself, or with ketchup or some kind of sauce. The great thing is also if you have any mixture left over, just freeze it and bring it out later on and use it for more pinwheels later on!  These are great for parties and things too. :) 

We ate some for lunch today, and probably have a little for dinner tonight. :) 

Oh, more news... i also applied for a part time job aswell. It is 3 days a week, i have no idea at this stage what the pay is like, but it sounds like something i would be interested in. :) Working only 3 days a week, gives me enough variety, and enough time to get the things done at home that need to be done! So we will see what comes of that. Its an admin position at a respite care cottage, for patients with dimentia. I have an utmost respect for the elderly, as i really do believe that they are a forgotten generation. It is so sad, to see how they just sit in a nursing home, day after day, week after week, month after month, with no family or friends visiting them. It just breaks my heart. I dont know how those relatives, or children of those people live with themselves. So i think if i get the position i would like it. :) I guess i will hear back from them next week sometime most likely. So i am kind of excited about that. If it doesnt happen, that is fine. :)

I also went through some of my draft posts that i had sitting in my blog dashboard, lol and oh my! There were some in there since before Christmas so i guess i will update on that now! No better time than the present.. Haha I am terrible, i know! I guess i was just to busy at Christmas time to blog too much. hehe :) You all know how crazy it can get around that time of year! 

I ended up making some baked goods for gifts for people at Church, and a few family members too! This was the first year that i have done baked goods for gifts, and i must say, i really enjoyed it! It was alot of fun! :) I made caramel fudge, some chocolates, (FUN!) and some sugar cookies, as well as some choc chip cookies, and white chocolate truffles. :) I am looking forward to more ideas for this year, too! 

My friend, Angela came over and we made these cute chocolates together. It was so fun! The moulds that you can get are so cute! ;) We had christmas trees, and snowmen, and all sorts! See the bags behind the chocolates, thats what i bagged the goods up in for gifts to give away. :-) We wrapped the chocolates in cellophane first, and tied them with ribbon. 

 I then made some caramel fudge for the first time, and it turned out so yummy! :) I will definately keep this recipe, and it was done in the microwave too! You cant get much easier than that! haha... :-)

Next, was the sugar cookies in all shapes! Christmas tree shapes, and stockings and stars. These were really fun too. :) I decorated them with raw sugar and melted chocolate.

And thats about it for baking! Dan and i had a quiet christmas breakfast together, and then headed on down to his mums place for lunch with the family. :-) I made some Egg pastries for christmas breakfast, some apple and cinnamon muffins and some hash browns, and bacon. It was delish, and was so nice to just spend it together... Hehe :-) Well with Abby at our feet of course! hehe She's getting so big, but still as cute as ever.... Hehe

Isnt this sweet? hehe Abbys Christmas stocking which had some doggie treats, and a new toy for her, she loved it! It was so cute, seeing her so attentive when we opened it and gave her, her new toy! hehe

I made a trifle to take to Lunch. This is a Christmas family tradition on my side of the family, too. :) We always have trifle on Christmas day. So yummy too! You can see why so many of us put on extra pounds at Christmas uh! hhahaha With all this good food around, who wouldnt! :) Im pretty sure trifle is an Aussie Christmas tradition too. Who else has it? :)

So there you have it.... my drafts are finally cleared out a little! I can add that to me declutter list eh? haha!
